This is an ultra large cleaver like Santoku of laminated steel with a 52100 carbon steel core and iron laminations.
An extraordinary amount of forging is required to make a knife like this. As large pieces of metal have to be stacked before fusing together at forge welding temperatures (1300+ celsius). After which the forging begins. Laminating steel and iron together has a low success rate. 15-30% of the knives generally don't succeed into a final knife.
It is not unusual for some kitchen knives to take a large form. The reason i have made these is because most other sizes are relatively conventional in the market as the raw materials required to make kitchen those knives are standardized and don't allow for larger processing.
